Chive & Dijon Crab Cakes with Garlic Aioli

1 lb. crabmeat
1/2 c. bread crumbs (I use homemade crumbs from GF Trader Joe’s Bread)
2 tbs. parsley
2 tbs. heavy cream
1 tsp. lemon juice
2 tsp. chives
1 tsp. Dijon mustard
1/8 tsp. cayenne pepper
1/3 c. egg beaters or 1 egg
1/3 c. bread crumbs (I use Gluten Free)

Combine first 10 ingredients in a large mixing bowl; stir until well blended.  Shape into 8 patties; set aside.  Place dry bread crumbs in a bowl and dip each of the 8 patties in the crumbs.  Cover both sides well.  Saute over medium-high heat in a non-stick pan in half olive oil and half butter.  Cook 5 minutes or until golden, turning once.

We like this served with either horseradish sauce or garlic aioli:

Garlic Aioli
3 cloves garlic
1 cup mayonnaise
1/2 tbsp fresh-squeezed lemon juice
1/4 tsp salt

Crush the garlic cloves with the flat of a knife, and remove the skin. Then mince the garlic very fine. Add a pinch of salt, and using the flat of the knife again, scrap and press the garlic against the cutting surface to make a very smooth paste. It’s making this paste from the fresh garlic that gives aioli its intense garlic flavor.

Add the garlic to a small bowl, and whisk together with the rest of the ingredients. Wrap and refrigerate for 30 minutes to allow the flavors to develop. Serve cold.

Again, this week, this week’s menus include many of the ideas from last week’s menu.
 The nice thing about being retired is that we can decide to change plans and eat out or bring home take out as the mood strikes.   Friday,  I enjoyed a lovely day out with a friend ending up at Red Lobster having our mutual favorite meal of Coconut Shrimp with Pina Colada Dipping Sauce and Tossed Salad.  Rick enjoyed steak on the grill at home.  It certainly is nice to be a bit flexible.

Orange Tapioca Jello Salad

Orange-Tapioca-Jello-Salad

1-3 oz. package Orange Gelatin
1- 3.5 oz. package Tapioca Pudding
1-3.5 oz. Vanilla  Pudding  (Not instant)
1 can crushed pineapple (large)
Mini marshmallows (if desired)

Drain pineapple, reserving the liquid.  Mix the gelatin and puddings together in a large saucepan.  Add enough water to the reserved juice to make 3 cups and stir into the dry mixture.  Slowly bring to a boil.  Allow to cool a little and mix in the pineapple.  Transfer to serving dish.  Top with mini marshmallows.  Refrigerate.
This recipe was given to me by my friend, Cindy DeJong.  This orange creamsicle salad   is such a great add to any meal.

Creative Corner – Card Making

How I enjoyed creating this Noah’s Ark card for my friend, Sue’s baby shower.
Her son Noah is due any day now.  Wished I had taken pictures of the nautical-themed shower decorations done by friends, Crystal and Heather.

Creative Corner – Card Making

Can I tell you that staying inside and crafting has been no chore this past July.  Temperatures and humidity here in the low Arizona desert have been soaring.  I rather enjoyed being inside creating special cards for the special people in our lives.

First card making priority….our grandson’s 9th Birthday card! I thought he might enjoy birthday slider card made on my Silhouette Cameo.  I used Lori Whitlock’s circle penny slider card #42685.  I did later discovered via a Youtube video that cutting an additional large circle atop the folded card would have made the chopped off top disappear.  Oh well, next time!

Love in a Box – August 2017

Our monthly “Love Box”  to our grandson has been in New York for a week now.  I just wanted to make sure that he had received it before I posted it’s contents.

LIAB-August 2017 Card
I put this Summer Fun card together on my Silhouette Cameo and tucked in a bit of cash perhaps for an ice cream treat.

This month two packages of tic tacs.  One for our grandson and one to share with a friend (Kid Act of Kindness.)  Love these cut little ice cream pins I found at Michaels.

Seems as if in my personal devotional time, messages heard online, in conversations with others and even in posts on Facebook, the theme of kindness has been coming up over and over.  I saw a post on Pinterest for Kids Acts of Kindness from Coffee Cups and Crayons , and I knew this would be the theme for this month “Love Package.”  KINDNESS!   So I put together is Kids Acts of Kindness Kit for our grandson, using the ideas from Coffee Cups and Crayons and putting my own little twist on the items to be included.  So here we go…
