Love in a Box for March 2018

Time seems to “March” on pretty quickly.  March ushers in the first day of Spring and hosts some pretty special days and observances, i.e., National Craft Month (rah, rah), National Foreign Language Month, National Irish-American Month, National Nutrition Month, Act Happy Week (3rd Week), and for special days:  Get over it day (9th), National Pi Day (14th), Our Dear Darling Daughter’s Birthday which also just happens to be Incredible Kid Day (15th), Saint Patrick’s Day (17th), First Day of Spring (20th), Palm Sunday (25th), Maundy Thursday (29th), and Good Friday
& I Am In Control Day (30th).

March’s “Love in A Box” going to New York to our Grandson (and his mom too), has been packaged up, mailed and has already arrived in New York.   The contents:

Kootie Catcher (2)Desgined this “Kootie Catcher” or “Fortune Teller” from Silhouette File #38121, and I
put a few St. Pat’s jokes in the middle.  Also printed a few pages empty for Sean
to fill in and design as he would like with the instructions on how to make.  He is becoming quite the talented artist!

Leprachan kisses (2)Leprechaun Boxes and Clover kisses designed with Silhouette Cameo.
Designs:  Box 119165 substituting clovers for hearts and kisses #37780.  One for our Grandson and one for mom.

Treats (3)Bag O’Treats topper is from the Silhouette Store, Design #57964.  I found the clipart on google images and the font is a free download (Albemarle Swash.)  The squeezable applesauce tag was designed on my Silhouette.  And, of course, his usual pack of tic tacs dressed in an St. Pat’s Day cover.  Font is Brayden Script.

Treats 2 (2)A few more things, some already shown, but dressed up, and Mac and Cheese, which he is pretty good at making all by himself.  He likes to cook!

Gluten Free Lofthouse-Style Frosted Sugar Cookies

2  cup white rice flour
2/3 cup potato starch
1/3 cup tapioca starch
1/4 cup cornstarch
½ teaspoons baking powder
1 ½ teaspoons xanthan gum
3/4 teaspoon salt
1/2 cup butter, softened
1 cup sugar
2 eggs
1 1/2 teaspoons vanilla extract
Sprinkles

In small bowl whisk together the flours, xanthan gum, and baking powder. Set aside.
Using electric mixer, beat the butter and sugar until fluffy, about 2-3 minutes. Add eggs one at a time, beating after each addition. Then beat in vanilla and salt.

With mixer on low speed beat in flour mixture until well incorporated. Split dough into 2 sections, scrape out onto silpat or parchment.  Place a piece of plastic wrap on top and roll out to about a bit more than 1/4″ thick.  Cut cookie dough with 2 1/2″ round (or whatever shape you wish) cookie cutter.   You can leave the cutout
cookies right on the parchment or stilpat, placing them about 1 1/2″ apart, and then slide the parchment to the cookie sheet. Remove and reroll the remaining dough to cut out more cookies.    Repeat with the other section of dough.

Preheat oven to 350 degrees.  Bake for 8-10 minutes, or just until edges become a real light brown.  Do not overbake.  Let set on baking sheet for a few minutes, then transfer to rack to cool completely before frosting.

Buttercream frosting:

2 cups of powdered sugar
1/2  Cup (1 stick) of softened butter
1/2 teaspoons of vanilla
1-2 tablespoons of milk

Beat sugar, butter and vanilla in a bowl.  Add milk, one tablespoon at a time, until desired consistency is reached.

I made these especially for my husband for Valentine’s Day, and packaged some up in a gift bag for some special friends.

Mom Cornish’s Beef Bake

Mom Cornish’s Beef Bake

1 pkg. beef stew meat
1 medium onion, sliced
1 bay leaf
1 can onion soup
1 tbs. Worcestershire sauce
1/3 c.  flour (I use 1/3 c. rice flour, 2 tbs. potato starch, 1 tbs. tapioca starch)
1 large can of peas (I prefer cooked frozen peas)

Dumplings:
1 egg.
1/3 c. milk
2 tbs. parsely flakes
2 tbs. cooking oil
1/4 tsp. sage
1 c. flour (I use GF Mix:  1/2 c. rice flour, 3 tbs. potato starch, 1 tbs. tapioca starch)

Brown beef in skillet, place in 2 quart casserole with onion slices.  Add bay leaf.  Combine soup with Worcestershire sauce.  Add flour and pour over meat and onions.  Cover; bake at 350 degrees for 2 hours, remove from oven.  Set oven at 400 degrees.  Remove bay leaf.  Mix peas into casserole.  Drop dumpings around.  Cover and bake for 20-25 minutres.

Dumplings:  Combine egg, milk, oil; add flour, stir until dry particles are moistened.

This is one of Mom Cornish’s recipes that I am glad to have it passed down to our family.  We enjoy it so much.  I am thankful for  such wonderful memories of watching Mom Cornish prepare meals in her kitchen and the lovely chats we had while doing that.
