Just love this dish our friend, Joyce Scott, brought this salad to one of our card-playing get-togethers.  It has become one of my favorite side dishes.

1 package of lemon gelatin (I use sugar free)
1 20 oz. can of crushed pineapple, drained, reserve juice
1 small can pimentos
1 8 oz. package of cream cheese
1 cup diced celery
1 cup chopped walnuts
6-8 oz. Cool Whip

Dissolved gelatin in heated pineapple juice.  Whip cream cheese and pimentos until fluffy.  Add the rest of the ingredients except for Cool Whip.  Fold in Cool Whip.  Refrigerate until set.



Mom Cornish’s Chocolate Dessert


This has to be my all time favorite recipe from Mom Cornish.  When I was a high schooler dating her son, I would so enjoy chatting with her while she cooked…such wonderful memories.  This is a great make-ahead dessert to keep in the freezer.  You just might want to double this recipe!

  1. Mix 1/4 c. plus 1 tbs. butter with 2 c. crushed vanilla wafers.  (I use Mi-Del Arrowroot Animal Cookies as they are gluten free…available at Fry’s.)
  2. Cream  1/2 c. butter, 1 1/4 c. confectioners’ sugar, 1 1/2 squares unswseetened chocolate, melted, 2 beaten egg yolks (or equivalent in egg beaters), 1/2 c. chopped walnuts.
  3.  Fold in  2 egg whites (or equivalent in pasteurized egg whites), beaten stiff, but not dry and 1/2 container of cool whip.

Line 8″ square ungreased pan with crumbs reserving about 1/4 c. for topping.  Layer the chocolate mixture on top of crumbs, then dress with the remaining cool whip and sprinkle with topping.  I like to top each piece with a maraschino cherry.  Freeze.  Serves 8-10



Love in a Box – September 2017

9fcf0479852c0a632aede560e4cb5f02--sayings-and-quotes-family-family-love-quotes-blessedMy daughter and I were chatting on the phone yesterday and sharing heart to heart the importance of staying connected.   Even though we are separated by miles,  we have found that sending a “Love in a Box” monthly does provide a means of communicating love for one another.  While the box was originally designed with our grandson in mind, recently I have decided to include a few things for our daughter also.  After all, she is important too!

“Back to School” is the theme for this “Love in a Box” package.  Our grandson will be starting school at a new Christian School in September.  He is a very gregarious young man who makes friends very easily.  We doubt there will be a  problem making a transition to his new school.  I think he is rather liking the whole idea.

Back to School CardLove this card I found at the Silhouette store: Design ID #87105 by Lori Whitlock.  I added a pocket with Bible Verse Colossians 3:23  as an encouragement for Sean to do his best this school year.  He also appreciates having a bit of spending cash of his own.

School Bus BoxAnother great find at the Silhouette store was this 3D School Bus Box, Design ID #64211 by Snapdragon Snippets.   I did find putting this together quite challenging, but well worth the time and effort.  I filled it with some sweets.

614606 He was also going to need to new “King James Bible” to use at his new school.  Grandpa was fortunate to find this in our church bookstore.

Back to School Kit.jpgA cute little Back to School Survival Kit with some great reminders of how to survive well at school.  I found this idea on google along with the cute star border.  I used Adobe Print Shop to combine the text and border.


And of course, as always, tic tacs covered with a Back to School case designed on my Silhouette.  I used Design ID #65188, by Tanya Batrak,  I just used the pencils by filling with color, grouping, and then cutting.  Background was found on Google images.  Font is Silhouette:  lw Sugar.

IMG_0972Sean Michael also requested some new colored markers and Grandpa did a great job picking these out.  A few others things included were a stapler with colored staples, pencils, pencil sharpener,  rubber bands,  and colored paper clips.

How thankful I am that my hubby shops for some of these items.  He is always on the lookout for fun and useful items to pack in the box.  He is the one who keeps the supply of PO boxes on hand and stands in line at the P.O. to mail this out each month.
