(I use Martha White GF Mix and add fresh blueberries and walnuts.)

GF Salmon Patties with Garlic Aioli
(I use crushed cheerios in lieu of crackers.)
Red Potatoes
Tomato, cuke salad

Garlic Aioli
2 garlic cloves, pressed, 1/4 teaspoon (or more) coarse kosher salt, 1/2 cup mayonnaise, 2 tablespoons olive oil, 1 tablespoon fresh lemon juice.  Refrigerate until chilled and flavors meld.

Crockpot Corn Chowder

Corn chowderCrockpot Corn Chowder

2 cups potatoes, peeled and cubed
½ onion, finely chopped
2 cups fresh or frozen corn
1 16-oz can creamed corn
1 cup chicken stock
6 slices bacon, fried until crisp and crumbled
1 tablespoon sugar
1 teaspoon Worcestershire sauce
1 teaspoon seasoned salt
1/4 teaspoon pepper
1 cup half and half (or cream, if desired)
additional crumbled bacon, for serving
green onion or chives, chopped


  1. Saute onion in oil until translucent.  Combine the chicken stock, onion, potatoes, corn, creamed corn, bacon, sugar, Worcestershire sauce, seasoned salt and pepper in a slow cooker and cook on high for 3-4 hours.
  2. Add in the half and half and cook an additional 15-20 minutes, until heated through.
  3. Serve topped with additional bacon and green onion or chives, if desired.

I can’t remember when I have been that sick for that long.  At any rate, we made it through our week with a few take outs, deli purchases, and some
easy-to-put-together meals.  I am so thankful for my dear, sweet husband, who so unselfishly steps up to the plate with hands-on help.  Each day I seem to be gaining and feeling a bit better, and I am so thankful for that.

Menu Plan Monday – June 12, 2017

MPM St. Pats

Menu planning for last week came from the hospital menu selection pamphlet.  Some selections good and some not to good.  After a 5-day stay for pneumonia, bronchitis, and lupus flare, it is great to be recuperating in the comfort of home.   I am so very thankful for my grocery shopping husband who has  done a terrific job getting the groceries in (one way or another) for this coming week.  This week’s menu plan will be a combo of our favorite “take-out” meals, some made-ahead freezer meals with hopefully a few home-cooked favorites if I am doing better by the end of the week.

“Love in a Box” for June 2017

So often inspiration for monthly “Love packages” comes from our grandson’s activities.  June’s package is all about the game…baseball!

How perfect is this pop up box card #147170 by Lori Whitlock at the Silhouette Store.  I changed up the colors to match our Grandson’s team colors.  I also added a back page with pocket to stash some spending cash and to write note of endearment.  The envelope is from Lori Whitlock – #135383: 6″ square thick envelope scallop that I embellished with a baseball and his name.

And what about popcorn, and peanuts and cracker jacks!

is #64491 by Jamie Cripps at the Silhouette store.   I found this clipart  “Take me out to the Ballgame” song and divided between the front and the back and designed and cut it on the Silhouette Cameo Designer Edition.

Also from the Silhouette Store,  Jamie Cripps 3d Baseball Box#57678.  I personalized with his name and loaded it with bubble gum balls and Sweet Sundae Mike and Ikes.  And, of course, his monthly tic tac box, with baseball background and clipart downloads from Google images.

Just had to finish with the ever popluar Fidget Spnrs.  He seems to be really fascinated by these things.  They are the rage, I guess.  Walmart said that they had to lock them up as people were hoarding them, buying them by the 100’s.

I did manage to tuck in a few things for his mom…some Mexican vanilla, tea bag holder box (which I forgot to take a pic of–too many senior moments) with some healthy herbal teas and some healthy protein snack bars.  Hopefully she will take a pic of the tea tower for me to keep on file.  The one to the right is pretty similar. The design is from the  Silhouette Design Store – View Design #26689: tea bag dispenser.

Creative Corner – Card Making

So many card making ideas…so little time!  Well, I truly have been in a creative mood for the past few weeks and have been busily constructing cards for so many occasions!  Our calendar has been jammed packed with birthdays, graduations, a baby shower, and of course, our grandson’s “Love in a Box” mailing.  I’ll post “Love in a Box” tomorrow after he receives it in New York.

IMG_0786  Made this card for a dear, suffering friend, Gene!  I do enjoy being greeted with his sweet smile when he is able to be out and about.  He certainly is a classic!

God definitely broke the mold when he made him!  How very thankful we are that God saw fit to call him and his wonderful family to Arizona!  We are soooo blessed!

Our friend, Irene, is continually blessing others with her delicious baked and canned goods.  She knows that Rick and I  cannot have sugar or wheat so she makes us this most wonderful home-canned sauerkraut.   Rick says it’s the best he has ever eaten!

We will truly enjoy that gift!

We so appreciated all the cards, gifts, and verbal congrats we received from so many our our dear friends and family for our 50th Wedding Anniversary.  Rick and I were both kinda under the weather to do much celebrating, but we hope to take a trip to the west coast for a few days later in the summer.

Loved  the idea of this baby shower card made for a dear friend who traveled from NY City to AZ for her sister’s graduation and family & friend baby shower.  Again I forgot to take a pic of the card front so am using the example that I got the idea from.
I used a dot embossing folder for the front.  “Baby” is Lakesight Personal Font  externally offset in white at .05 and printed and cut on my Silhouette.  Pink edged with Zigzag sewing machine stitch.  Butterfly was made with Stampin up’s Butterfly basics stamps and dies in same color & style as the the card envelope.  Stampin up cardstock  & Ink in Early Expresso &  Powder Pink.  I made a pocket for the inside to stash some cash hoping to ease their packing for the trip back to the city.  Desert diva’s free sentiment #605 for the front of the envelope.

For the Graduates – A couple of young folks from the Mollet family were moving up and were kind enough to keep us posted as to how they are doing.  I thought these cards would be just the thing.  You can find complete instructions for making these here on Melissa’s Fairly Crafty Blog.   I did make a few change ups and designed cutting files on my Silhouette Cameo.  I did make an extra back page to do a bit of congratulatory writing!

Well, May was a pretty busy month, and hopefully activity will slow a bit so that I can do some experimenting with new cards.  Still feeling a bit under the weather, but hey, that just gave me another idea for a new card.
