Gluten Free Hush Puppies

½ cup potato starch
½ cup cornstarch
½ cup cornmeal
1 tablespoon sugar or sugar substitute
1 teaspoon baking powder
¼ teaspoon baking soda
1 egg
1/2 cup of buttermilk
1/2 teaspoon xanthan gum
Pinch of salt
1 ¼ cup finely chopped onion

    In a medium bowl, combine all ingredients.  Mix until well blended and no lumps remain.
    Drop by rounded teaspoonful into hot oil (375℉.) Turn as needed until medium golden brown.  Drain on paper towels.  Makes about 20 hush puppies.  Serves 5
