Dijon-Crusted Fish

Dijon-Crusted Tilapia

3 tablespoons mayonnaise
2 tablespoons grated Parmesan cheese, divided
1 tablespoon lemon juice
2 teaspoons Dijon mustard
1 teaspoon horseradish (I use Horsey Sauce to taste.)
4 Tilapia fillets (5 oz. each)
1/4 cup dry bread crumbs (I use gluten-free crumbs from Trader Joe’s GF Bread.)
2 teaspoons butter, melted

In a small bowl, combine the mayonnaise, 1 tablesppon Parmesan cheese, lemon juice, mustard and horseradish. Place filets on a baking sheet coated with cooking spray. Spread mayonnaise mixture evenly over filets.
In a small brown, combine bread crumbs, butter and remaining Parmesan cheese; sprinkle over filets. Bake at 425 degrees for 13-18 minutes or until the fish flakes easily with a fork.
