Red Pepper Relish

We conveniently buy Red Pepper Relish at Cal Ranch Store or Cracker Barrel but they are not carrying it anymore.  It has become very hard to find in our area, so I guess, I will be making a double batch today.  I just couldn’t pass up a great buy on red peppers at the Dollar Store 6 for $1.99.

Sweet & Spicy Red Pepper Relish

2 large red peppers, finely chopped
1 onion, finely chopped
1/4 c. corn syrup
1 1/4 c. sugar
1 c. white vinegar
1/2 tsp. dried red pepper (less for a milder relish)
couple of drops of hot pepper sauce
1 tsp. salt
few drops of red food color
2 tbs. cornstarch
1/4 c. water

Combine all ingredients except cornstarch and water in a sauce pan.  Bring to full boil, and turn down heat to medium and let simmer for 2 hours or until thickened down.  Mix cornstarch with water and stir into pepper mixture.  Stir until translucent.  Ladle into jars.  Makes two pint jars.
