Joyce’s Mystery Salad

1 package lemon jello
1 20 oz. can crushed pineapple (drained, reserve juice)
1 small can pimento
1 8 0z. package cream cheese
1 c. diced celery
1 c. chopped walnuts
1 container of cool whip

Dissolve jello in heated pineapple juice.  Whip cream cheese until creamy and add pimentos.  Add rest of ingredients and combine.  Refrigerate to firm up a bit and then fold in cool whip.  Refrigerate until firm.

My friend, Joyce Scott, brings this salad to pot lucks often and I so enjoy it.  She makes it with sugar free jello so it’s great for us diabetics.  Just had to ask her for this recipe.  Love it!
