Sausage Squash Special

This recipe is one of our daughter’s favorite recipes.  How nice it is to have some input into menu planning this month.  Our daughter is such an excellent cook, and we so enjoy eating whatever she makes.  This is such a tasty way to use the excess of summer squash produced at this time of year.

Sausage Squash Special

1 pound bulk pork sausage
1 clove garlic, crushed
4 cups sliced summer squash
1/2 c. dry bread crumbs (I used gluten free bread crumbs.)
1/2 c. grated Parmesan cheese
1/2 c. milk
1 tbs. snipped parsley
1/2 tsp. salt
1/2 tsp. dried oregano, crushed
2 beaten eggs

Cook sausage and garlic till meat is brown; drain off excess fat.  Cook squash, covered in small amount of water till tender; drain.  Stir squash and next 6 ingredients into meat; fold in eggs.  Transfer to 10 x 6 x 1 1/2 inch baking dish.  Bake at 325 degrees for 25-30 minutes.  Makes 4 to 6 servings.
