Red Lentil Soup
2 tbs. olive oil
1 large onion, chopped
1 c. carrots, diced
2 cloves garlic, minced
1/4 tsp. salt
1/3 c. red lentils
4 c. chicken broth
1 tbs. fresh parsley, minced
Heat oil in large saucepan over medium high heat. Add the onion and cook, stirring frequently, until tender about 4-5 minutes. Add carrot, garlic and salt and cook, stirring one minute. Stir in lentils. Add broth and bring to a boil. Reduce heat cover and simmer 15-20 minutes, or until ingredients are tender. Place soup, one half at a time into blender and process until smooth. (I use my immersion blender.)
Pour soup into bowls and garnish with parsley.
