3 lbs. cod fillets
3 tbs. butter
3 tbs. GF flour
2 cups whole milk
1 tbs. Dijon mustard
1 tsp. finely grated lemon zest
1/2 c. shredded parmesan
1 1/2  c. shredded mild cheddar cheese
1 c. GF cracker or bread crumbs
1 tbs. olive oil

Scald mik in the microwave for 4-5 minutes until just under the boiling point.

Meanwhile in a medium saucepan, add the butter and flour and cook until blended.  Pour in the scalded milk whisking constantly.  Cook until thickened.  Add the lemon zest, mustard, salt and pepper.  Add the Parmesan cheese just before pouring onto the fish.

Arrange the fish in the bottom of a greased 89 x 9 pan baking dish.  Pour the sauce over the fish.  Top with the cheddar cheese.  Mix crumbs with oil and sprinkle over cheese.

Bake at 350 degrees for 45-60 minutes until bubbling and the top has evenly browned.
