Apple and Quinoa Breakfast Cereal
1/2 c. uncooked quinoa
1 c. water
1 tbs. butter
2 medium apples, peeled and diced
1/2 tsp. cinnamon
1-2 tbs. brown sugar, depending on your taste
1/4 c. chopped pecans
1/4 c. skim milk
- Soak quinoa in water for 5 minutes. Drain and rinse.
- Bring 1 cupsof water to boil, add quinoa, and bring to boil. Cover with lid and simmer for about 10 minutes or until quinoa is fluffy.
- Melt 1/2 tablespoon of butter in medium sized skillet, add apples and cinnamon. Saute over medium heat until apples are softened. Add about 2 tablespoons of water and nuts and continue cooking down until water dissipates.
- Mix quinoa and apple mixture, 1 tbs. butter, and brown sugar and stir.
- Serve with milk.
