Recipe of the Week – Warm German Potato Salad

German Potato Salad 2

10 medium potatoes
1 1/2 pounds of bacon
1 large onion
3 hard-boiled eggs

Boil potatoes, and and slice thin.  Fry bacon crisp, beak up into small pieces.  Add onion, cut very thin.  Saute onion until transparent, but not brown.  Mix all together.

Dressing:
1/2 c. or less vinegar
1/2 c. water
3-4 tbs. sugar
3/4 c. bacon drippings

Dissolve 2-3 tbs. of flour in cold water (no lumps) and make a smooth gravy.  Pour over potatoes and eggs.

Serves 8-10.  This stays nice in a crock pot.  I also occasionally add sliced polish sausage to the recipe for a nice crock pot dinner.  Serve with a side of braised red cabbage, and sweet honey mustard.
