1 c. semi-sweet chocolate chips
(I used half milk chocolate and half semi-sweet)
2 tbs. coconut oil
Chopped nuts and coconut
Slice bananas in 1/2 inch pieces (or whatever size you like.) Place on parchment paper lined cookie sheet and freeze for two hours. Melt chocolate chips and coconut oil in double boiler. Remove from heat. Dip frozen bananas in chocolate and sprinkle with nuts or coconut. (I like toasted coconut!) If the chocolate gets a little thick, just add a bit more coconut oil to thin down. Tip: Just work a few frozen banana slices at a time as they will thaw and get soggy. Next time I will try using some peanut butter chips.
