Recipe of the week – Lil’s Acini de Pepe Fruit Salad

This is one of my all time favorite salads!  This recipe was given to me by my friend, Lil Spear.  She used to bring this to our potluck dinners at church in New York.

Lil’s Fruit Salad

1/2 lb. Acini de Pepe Pasta
1 (20 oz.) can of crused pineapple
1 can of fruit cocktail
1 (11 oz.) can mandarin oranges
1 (8 oz.) tub Cool Whip
2 eggs
2 tbs. flour
3/4 c. sugar
pinch of salt

Combine juice of fruit cocktail and mandarin oranges, 2 tbs. flour , sugar, eggs, salt in a medium-sized saucepan.  Cook until thick, then cool.  Cook macaroni, rinse and cool.  Mix together custard, fruits, macaroni and Cool Whip.  Refrigerate.  This makes quite a large salad making it a good pot luck dish!
