Easter Dinner – Recipe of the Week – Scalloped Pineapple

My daughter called from New York last night, and we were doing a little Easter Dinner planning over the phone.  We’re so excited about being able to be together this year to celebrate Easter.   This is one of our family favorites and is such a compliment to a ham dinner.  The recipe calls for 2 cups of sugar but I only use 1 1/2 cups or even less.

Scalloped Pineapple

Scalloped Pineapple

Mix:  4 cups of bread, diced & 1  1/2 c. sugar

Mix:  3 eggs, well beaten, 1 large can of chunk pineapple, drained, 1/2 c. milk, 1/2 c. butter melted

Mix dry ingredients with liquid ingredients.  Bake at 350 for 40-45 minutes.
